Portuguese rosé wine: how to choose by style and food

Rosé wine should not be judged by colour alone, nor does it need to be reserved for hot days. Some rosés are light and direct, others have more texture, and some can accompany a whole meal.

Colour offers a clue, but it does not tell the whole story. The grape variety, time on the skins, acidity, alcohol and the producer's work make a bigger difference in the glass.

Light rosé or structured rosé?

A light, fresh, fruity rosé works well as an aperitif, with salads, simple shellfish and starters. If you are looking for a bottle for the table, choose a wine with more texture and enough acidity to accompany dishes with sauce, grilled fish or white meat.

A darker rosé is not necessarily sweeter or heavier. Its colour may result from the production method and the time on the skins. Read the profile given by the producer and think about the dish.

Dry or sweet?

It is common to find dry Portuguese rosés made for the table, but the fruit can give an impression of sweetness. If the wine has acidity, the fruit stays balanced. If acidity is low, the same profile can seem heavy.

What food goes with rosé?

  • Salads with salty ingredients, tomato or herbs.
  • Grilled fish, sushi and shellfish.
  • Pasta, fish rice and summer dishes.
  • Charcuterie and white meat when the wine has some structure.
  • Petiscos, especially when you want a bottle that will suit people with different preferences.

With very spicy dishes or desserts, check the sweetness and alcohol first. A dry rosé can seem more austere when the dish is very spicy or sweet.

Serve rosé chilled, but not too cold. Excessively low temperatures hide aroma and texture; a few minutes in the glass may be enough for the wine to show better.
