É a primeira vez que lançamos o “irrequieto” Oliver Martin com 2 anos de estágio para o mercado. Estagiou sobre as borras finas, e mantivemos a mesma mentalidade da colheita de 2019. Uma parte do lote fez malolática e outra manteve o nervo do ácido málico!
Porquê? Para o manter elétrico, com a mesma sensação mineral (giz) e com uma pequena textura, suavizada pelo “Sur-Lies”.
We love this 2020, not only because it takes us back to the 2018 vintage that captivated us so much, but also because we now know how to make it better.

Oliver Martin: de filho, a inspiração para fazer este branco da Bairrada. Nesta 4ª edição, o “Oli” está mais sedutor, mais envolvente, ainda mais irrequieto, e cada vez mais complexo. A Bairrada, tal como uma criança como o “Oli”, precisa por norma de tempo para ser apreciada de forma consensual. Com este blend quis demonstrar que “nervo” pode vir em forma sedutora e sempre mas sempre, a nossa amada Bairrada nos dá um incrível senso de lugar através da sua acidez e mineralidade que lhe dão a espinha dorsal. Se muitas vezes acabo com os cabelos em pé com a intensidade do meu filho, por outro, não podia haver melhor criança para me inspirar a fazer estes vinhos.
